Homemade Snickerdoodle Protein Cookie

Makes: 4 small cookies or 2 large cookies

Prep Time: 3 mins

Cook Time: 8-10mins

INGREDIENTS

3 tbsp flour (any flour works, I used coconut)
 
1 scoop vanilla protein powder (about 32-34 grams)
 
2 tbsp nut or seed butter of choice (I used almond butter)
 
1 tbsp sticky sweetener of choice (I used maple syrup)
 
1-2 tbsp liquid of choice (I used water)

1/4 teaspoon cinnamon

1-2 teaspoons granulated sweetener of choice

1 pinch of sea salt 

DIRECTIONS

Preheat your oven to 350 degrees
 

 
In a small mixing bowl, add the protein powder, flour, cinnamon, sugar, and salt, incorporate them together well.
 

 
Add your sticky sweetener, and nut butter to your dry ingredients, mixing them together.
 

 
The mixture should be crumbly.
 

 
Using a tablespoon, add liquid of choice until it becomes a thick batter.
 

 
Form balls with the dough and press cookies onto a cookie sheet lined with parchment paper.
 

 
Whatever size you make them will be the size of the cookie.
 

 
Top with a little more cinnamon sugar and bake for 15-20 minutes, until the cookie looks just cooked and still soft.
 

 
Remove your protein cookies from the oven and allow them to cool completely. Enjoy immediately or save for later!
